Main Ingredients

Method

Preparing the Fish

  1. 1

    Marinade the Fish

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk until well blended.

  2. 2

    Coat the Fish

Place the fish in the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes.

Cooking the Rice

  1. 3

    Rinse the Rice

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

  2. 4

    Cook the Rice

In a saucepan, bring the vegetable broth to a boil. Add the rinsed rice, cover, and reduce to a simmer. Cook for 15-20 minutes or until the liquid is absorbed. Remove from heat and let sit covered for 5 minutes.

Cooking the Vegetables

  1. 5

    Prepare the Asparagus

In a skillet, heat a tablespoon of olive oil over medium heat. Add the trimmed asparagus and sauté for about 5-7 minutes until tender but still crisp.

  2. 6

    Add Cherry Tomatoes

Add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften. Season with salt and pepper to taste.

Grilling the Fish

  1. 7

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 8

    Grill the Fish

Remove the fish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Serving

  1. 9

    Plate the Dish

On a plate, serve a portion of the basmati rice, alongside the sautéed asparagus and tomatoes, and top with the grilled fish.

  2. 10

    Garnish and Enjoy

Garnish with chopped fresh parsley and serve with lemon wedges on the side. Enjoy your Maurepas!
