Prepare the Broccoli
Wash the broccoli florets thoroughly under cold water and cut them into bite-sized pieces.

Set up the Steamer
In a pot, add 1 cup of water and place a steamer basket over the pot. Ensure that the water does not touch the bottom of the steamer.

Steam the Broccoli
Bring the water to a boil over medium heat. Once boiling, add the broccoli florets to the steamer basket. Cover with a lid and steam for about 5-7 minutes or until the broccoli is bright green and tender but still crisp.

Once cooked, remove the broccoli from the steamer, season with salt to taste, and set aside.

In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.

In a mixing bowl, whisk together the egg yolks and lemon juice until the mixture is pale and slightly thickened.
