    Prepare the Ingredients

    Chop the onion, green bell pepper, celery, and mince the garlic. Slice the okra and set aside. Peel and devein the shrimp if not pre-prepared.

    Cook the Sausage

    In a large pot, heat olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.

Cooking the Gumbo

    Sauté the Vegetables

    Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Sauté for about 5-7 minutes, until the vegetables are soft.

    Add Liquids

    Pour in the chicken broth and diced tomatoes. Stir in Worcestershire sauce and hot sauce. Bring the mixture to a boil.

    Season the Gumbo

    Add bay leaves, thyme, Cajun seasoning, salt, and black pepper. Reduce heat and let simmer for 30 minutes.

    Add Okra and Seafood

    Stir in the sliced okra, shrimp, crab meat, and oysters. Cook for an additional 10-15 minutes until the seafood is cooked through.

Serving

    Serve the Gumbo

    Remove the bay leaves from the gumbo. Serve hot over cooked rice and garnish with chopped parsley and sliced green onions.
