Prepare the Crab Fingers
If using fresh crab fingers, clean and rinse them under cold water. If using imitation crab meat, cut it into bite-sized pieces.

Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Prepare the Breadcrumbs
Place the breadcrumbs in a shallow dish, ready for coating the crab fingers.

Coat the Crab Fingers
Dredge each crab finger first in the flour mixture, shaking off excess. Then dip it in the egg mixture, and finally coat it with breadcrumbs. Set aside on a plate.

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
