Crabfinger Preparation

Method

Crabfinger Preparation

  1. 1

    Prepare the Crab Fingers

If using fresh crab fingers, clean and rinse them under cold water. If using imitation crab meat, cut it into bite-sized pieces.

  2. 2

    Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

  3. 3

    Prepare the Wet Mixture

In another bowl, whisk together the eggs and milk until well combined.

  4. 4

    Prepare the Breadcrumbs

Place the breadcrumbs in a shallow dish, ready for coating the crab fingers.

  5. 5

    Coat the Crab Fingers

Dredge each crab finger first in the flour mixture, shaking off excess. Then dip it in the egg mixture, and finally coat it with breadcrumbs. Set aside on a plate.

Frying

  1. 6

    Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 7

    Fry the Crab Fingers

Carefully add a few crab fingers to the hot oil, making sure not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy.

  3. 8

    Drain and Serve

Using a slotted spoon, remove the fried crab fingers and place them on paper towels to drain excess oil. Continue frying the remaining crab fingers.

Dipping Sauce Preparation

  1. 9

    Mix the Dipping Sauce

In a small bowl, combine the mayonnaise, hot sauce, lemon juice, and garlic powder. Stir until smooth and well blended.
