In a medium bowl, combine the buttermilk and hot sauce. Add the alligator meat and ensure it's fully submerged in the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight.

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, paprika, garlic powder, onion powder, salt, and black pepper until well combined.

In a large, deep pot or skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Remove the alligator meat from the marinade and let excess liquid drip off. Dredge each piece in the breading mixture, ensuring it is well coated on all sides.
