Crawfish Filling Preparation

    Prepare the Crawfish

    In a large bowl, combine crawfish tails, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well and set aside.

    In a shallow bowl, whisk together flour and cornmeal. In another bowl, beat the eggs and buttermilk together until smooth.

    Coat the Crawfish

    Take each crawfish tail, dip it into the egg mixture, and then coat it with the flour-cornmeal mixture. Set aside on a plate.

    Fry the Crawfish

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the coated crawfish tails in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
