For the Boudin Balls

Method

Preparing the Boudin Balls

  1. 1

    Mix the Ingredients

In a large mixing bowl, combine the boudin sausage (removed from casing), cooked white rice, chopped green onions, garlic powder, onion powder, cayenne pepper, and black pepper. Mix thoroughly until all ingredients are well incorporated.

  2. 2

    Add Eggs

Crack the eggs into the mixture and blend them in until the mixture is sticky and can hold its shape.

  3. 3

    Form the Balls

Using your hands, form the mixture into small balls, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.

  4. 4

    Prepare for Breading

Set up a breading station: place flour in one bowl, beaten eggs in another bowl, and bread crumbs in a third bowl.

  5. 5

    Bread the Balls

Roll each boudin ball in flour, then dip it into the beaten eggs, and finally coat it with bread crumbs. Ensure each ball is well-covered.

  6. 6

    Heat the Oil

In a deep fryer or a large pot, heat the oil to 350°F (175°C). Use a thermometer for accuracy.

  7. 7

    Fry the Boudin Balls

Carefully drop the breaded boudin balls into the hot oil, a few at a time, to avoid overcrowding. Fry until golden brown, about 3-4 minutes, turning occasionally for even cooking.

  8. 8

    Drain and Serve

Once cooked, remove the boudin balls from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot.
