Method

Cooking the Pasta

    Boil Water

    In a large pot, bring salted water to a boil.

    Cook Spaghetti

    Add spaghetti to the boiling water and cook according to package instructions, usually about 8-10 minutes, or until al dente.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of pasta water, then drain the spaghetti.

Preparing the Sauce

    Cook Pancetta

    In a large skillet over medium heat, add pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a bowl, whisk together eggs, grated Parmesan, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with pancetta and mix well.

    Add Egg Mixture

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, using tongs to toss the spaghetti with the sauce. Add reserved pasta water a little at a time until creamy.

    Season

    Taste and add salt if needed.

Serving

    Plate the Carbonara

    Serve immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
