Zesty Marinara Sauce

Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Breading Mixture
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Soak in Buttermilk
Place the calamari rings in a separate bowl and pour buttermilk over them. Let soak for about 30 minutes.

Coat the Calamari
Remove each calamari ring from the buttermilk and let the excess drip off. Dredge in the flour-cornstarch mixture until evenly coated.

Heat the Oil
In a deep frying pan or pot, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry calamari in batches, cooking for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, red pepper flakes, and salt. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish with Fresh Basil
Remove from heat and stir in chopped fresh basil. Adjust seasoning to taste.
