Baguette Preparation

    Mix the Dough

    In a large bowl, combine the sourdough starter, flour, and water. Mix until a shaggy dough forms.

    Autolyse

    Let the dough rest for 30 minutes to allow the flour to absorb the water.

    Add Salt

    Sprinkle the salt over the dough and mix it in thoroughly by hand or with a dough scraper.

    Bulk Fermentation

    Cover the bowl with a damp cloth and let it rise at room temperature for 4-6 hours, performing stretch and folds every 30 minutes.

    Shape the Baguettes

    Once the dough has doubled in size, turn it out onto a lightly floured surface. Divide the dough into two equal pieces and shape each piece into a baguette.

    Final Proof

    Place the shaped baguettes onto a floured couche or baking sheet, cover, and let them rest for another 1-2 hours.

    Preheat the Oven

    Preheat your oven to 475°F (245°C) with a baking stone inside if you have one.

    Score and Bake

    Use a sharp blade to score the tops of the baguettes. Bake for 20-25 minutes until golden brown and crusty.

    In a small bowl, combine the olive oil and chopped fresh herbs. Let it sit to infuse the flavors.
