    Prepare the Potatoes

    Preheat your oven to 375°F (190°C). Peel the Russet potatoes and slice them thinly, about 1/8 inch thick. Rinse the slices in cold water and pat them dry with a towel.

    Make the Cream Mixture

    In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, and add salt, black pepper, and fresh thyme. Bring to a gentle simmer.

    Layer the Ingredients

    In a greased 9x13 inch baking dish, layer half of the potato slices at the bottom. Spread half of the caramelized onions over the potatoes, followed by half of the blue cheese and half of the cream mixture. Repeat the layers with the remaining potatoes, onions, blue cheese, and cream.

    Add Parmesan and Bake

    Sprinkle the grated Parmesan cheese evenly over the top of the layered dish. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the top is golden brown.
