    Marinate the Steak

    In a bowl, combine olive oil, minced garlic, lime juice, cumin, salt, and black pepper. Add the skirt steak and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Leek Butter

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped leek and sauté until soft and translucent, about 5 minutes. Set aside.

    Make the Chimichurri

    In a bowl, mix together parsley, cilantro, red wine vinegar, and red pepper flakes. Season with salt and pepper to taste. Let it sit for at least 15 minutes for the flavors to meld.

    Cook the Fries

    Preheat your oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and bake for about 30-35 minutes, or until golden and crispy. Remove from the oven and sprinkle with grated Parmesan cheese.

    Grill the Steak

    Preheat a grill or grill pan over high heat. Remove the steak from the marinade and grill for about 4-5 minutes per side for medium-rare, or until your desired doneness. Let the steak rest for a few minutes before slicing.

    Serve the skirt steak sliced, topped with leek butter and accompanied by chimichurri sauce and hand-cut parmesan fries.
