Crispy Day Boat Calamari

Preparation

    Pickled Onion

    In a small bowl, combine the sliced red onion with white vinegar and water. Let it sit for at least 30 minutes to pickle.

    Tomato Salad

    Chop the tomatoes and mix them with lime juice, salt, and chopped cilantro in a bowl. Set aside.

    Roasted Garlic Aioli

    In a mixing bowl, mash the roasted garlic cloves and mix with mayonnaise. Add salt and pepper to taste.

    Calamari Preparation

    In a bowl, whisk together flour, cornstarch, paprika, salt, and black pepper. Dip the calamari rings into buttermilk, then dredge in the flour mixture.

    Frying Calamari

    Heat vegetable oil in a deep pan over medium-high heat. Fry the calamari in batches until golden brown, about 2-3 minutes per batch. Remove and drain on paper towels.

    Serve

    Serve the crispy calamari with roasted garlic aioli, chile sauce, pickled onions, and tomato salad on the side. Garnish with fresh cilantro.
