Prepare the Ribs
Remove the membrane from the back of the ribs. Rinse under cold water and pat dry.

Marinate
In a bowl, mix yellow mustard and ale. Coat the ribs thoroughly with the mixture. Let marinate for at least 1 hour, or overnight in the refrigerator for best flavor.

Make the Dry Rub
In a separate bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well.

Rub the Ribs
After marinating, remove ribs from the marinade and coat them generously with the dry rub.

Preheat Grill
Preheat your grill to a low heat, around 225°F (107°C).

Grill the Ribs
Place the ribs on the grill, bone side down. Cook for 3-4 hours, maintaining a low temperature, until the meat is tender and pulls away from the bone easily. Occasionally baste with any leftover marinade.

Serve
Remove from grill and let rest for 10 minutes before slicing. Serve with your favorite barbecue sauce.
