1. Cook the Jasmine Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of jasmine rice, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.
2. Prepare the Seafood
Season the grouper, shrimp, and scallops with salt and pepper to taste. Heat a grill or grill pan over medium-high heat.
3. Grill the Seafood
Add the grouper fillets to the grill and cook for 4-5 minutes on each side until cooked through. Add the shrimp and scallops to the grill and cook for about 2-3 minutes per side, until shrimp are pink and scallops are opaque.
4. Prepare the Sauces
In separate bowls, prepare the lemon garlic butter sauce, spicy chipotle sauce, and creamy cilantro sauce. Keep warm.
5. Plate the Dish
Serve the grilled seafood over a bed of jasmine rice. Drizzle the sauce trio over the seafood and garnish with chopped cilantro.
