Prepare the Filet Mignon
Season the filet mignon with salt and crushed black peppercorns, pressing them into the meat.

Sear the Filet Mignon
In a large skillet, heat olive oil over medium-high heat. Add the filet mignon and sear for about 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

Make the Cognac Sauce
In the same skillet, add cognac and scrape up any browned bits from the bottom. Allow it to reduce by half, then stir in heavy cream and simmer until thickened. Season with salt and pepper to taste.

Prepare the Broccolini
In a pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green. Drain and set aside.

Serve
Plate the filet mignon with broccolini on the side, drizzle with cognac sauce, and top with crispy onion rings.
