    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil in salted water until tender, about 10-15 minutes. Drain and set aside.

    Cook the Bacon

    In a skillet, cook the smoked bacon over medium heat until crispy. Remove and set aside on paper towels to drain, leaving the bacon fat in the skillet.

    Sauté the Spinach

    In the same skillet, add the garlic and sauté for 1 minute. Add the baby spinach and sauté until wilted. Drizzle with a little olive oil and season with salt and pepper. Remove from skillet and set aside.

    Sear the Scallops

    Pat the scallops dry and season with salt and pepper. In the same skillet, add olive oil and butter over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until golden brown. Remove from the skillet.

    Make the Cream Sauce

    In the same skillet, add the heavy cream and simmer for 2-3 minutes until slightly thickened. Stir in the crispy bacon pieces.

    Assemble the Dish

    On each plate, place a portion of sautéed spinach, top with seared scallops, and drizzle with the cream sauce. Serve alongside the crispy potatoes.
