    Roast the Tomatoes

    Preheat the oven to 200°C (400°F). Toss the cherry tomatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 20 minutes until they are blistered and caramelized.

    Prepare the Crostini

    While the tomatoes are roasting, slice the sourdough bread into 1/2 inch thick slices. Arrange the slices on a baking sheet and drizzle with olive oil. Toast in the oven for about 10 minutes, or until golden and crispy.

    Assemble the Dish

    Once the tomatoes are done roasting, remove them from the oven. On a serving platter, place the toasted sourdough crostini. Top each crostini with a generous spoonful of burrata cheese, followed by the roasted tomatoes and fresh basil leaves. Drizzle with balsamic vinegar for added flavor.

    Season with additional salt and pepper if desired. Serve immediately while the crostini are still warm.
