Prepare the Corn Salsa
In a bowl, combine corn, diced red bell pepper, red onion, cilantro, lime juice, salt, and pepper. Mix well and set aside.

Make the Creole Mustard Sauce
In a small bowl, whisk together creole mustard, honey, and minced garlic. Set aside.

Blacken the Tuna
Rub the tuna steaks with olive oil and then coat them with Cajun seasoning, pressing it into the fish.

Cook the Tuna
Heat a skillet over high heat until it's very hot. Add the seasoned tuna steaks and cook for about 2-3 minutes on each side, or until they are blackened and cooked to your desired doneness.

Serve
Plate the blackened tuna steaks and top with corn salsa. Drizzle with the Creole mustard sauce before serving.
