Roast the Beets
Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast in the oven for about 45-60 minutes, or until tender. Let cool, then peel and slice.

Prepare the Dressing
In the same skillet, pour off excess bacon fat, leaving about 1 tablespoon. Add olive oil, apple cider vinegar, honey, salt, and black pepper. Whisk to combine and warm over low heat.

Assemble the Salad
In a large bowl, combine baby spinach, sliced roasted beets, thinly sliced red onion, and crumbled goat cheese. Drizzle the warm bacon vinaigrette over the top and toss gently to combine.

Serve immediately, garnished with extra crumbled goat cheese and bacon if desired.
