    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add Broth and Wine

    Once the onions are caramelized, add the dry white wine, scraping any brown bits from the bottom of the pot. Allow it to simmer for about 5 minutes. Then, add the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Baguette

    While the soup simmers, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven until golden brown, about 5-7 minutes.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the hot soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and generously sprinkle with shredded Gruyère cheese.

    Broil the Cheese

    Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.
