Cook the Rice

In a saucepan, bring the chicken broth to a boil. Add the Arborio rice, reduce the heat to low, and simmer for about 18-20 minutes until the rice is creamy and cooked through. Let it cool.

Prepare the Mixture

In a large bowl, combine the cooled rice, lobster meat, Parmesan cheese, beaten egg, minced garlic, minced shallot, parsley, salt, and black pepper. Mix until well combined.

Form the Balls

With wet hands, take a portion of the mixture and form it into a ball, about the size of a golf ball. Repeat until all the mixture is used.

Coat the Balls

Dredge each ball in flour, dip in beaten egg, and then roll in breadcrumbs until fully coated.

Fry the Arancini

In a deep pot, heat the olive oil over medium-high heat. Once hot, carefully add the rice balls in batches, frying until golden brown on all sides. Remove and drain on paper towels.

Serve

Serve the lobster arancini warm with a dipping sauce of your choice, such as marinara or garlic aioli.
