    Prepare the Peppercorns

    Crush the black peppercorns using a mortar and pestle or a zip-top bag and a rolling pin.

    Season the Steaks

    Pat the New York strip steaks dry with paper towels. Season both sides generously with salt and the crushed peppercorns.

    Cook the Steaks

    In a large skillet over medium-high heat, heat the olive oil. Once hot, add the steaks and sear for about 4-5 minutes on each side, depending on your desired doneness. Remove the steaks from the skillet and let them rest.

    Make the Sauce

    In the same skillet, reduce the heat to medium, add the butter, and cook until melted. Add the heavy cream and stir well, scraping any browned bits from the bottom of the pan. Let it simmer for about 3-4 minutes until slightly thickened. Adjust seasoning with salt if necessary.

    Sauté the Spinach

    In a separate pan, heat a drizzle of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt to taste.

    Slice the rested steaks and serve them on plates topped with the peppercorn sauce alongside the garlic sautéed spinach.
