For the Mustard-Braised Brussels Sprouts

For the Beurre Blanc

For the Salmon

Method

Preparing the Mustard-Braised Brussels Sprouts

  1. 1

    Sauté the Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

  2. 2

    Add Brussels Sprouts

Add halved Brussels sprouts to the skillet, season with salt and black pepper, and cook for about 5 minutes, stirring occasionally.

  3. 3

    Combine Ingredients

Stir in Dijon mustard and vegetable broth. Cover and simmer for 10-15 minutes until Brussels sprouts are tender.

Making the Beurre Blanc

  1. 4

    Sauté Shallots

In a saucepan, melt 2 tablespoons of butter over medium heat. Add shallots and sauté until translucent.

  2. 5

    Add Wine

Pour in white wine, increase heat, and reduce by half.

  3. 6

    Incorporate Butter

Lower the heat and whisk in the remaining butter, a few pieces at a time, until the sauce is smooth.

  4. 7

    Finish the Sauce

Stir in heavy cream, lemon juice, salt, and white pepper. Keep warm until serving.

Cooking the Salmon

  1. 8

    Season the Salmon

Preheat your oven to 375°F (190°C). Season salmon fillets with olive oil, salt, and black pepper.

  2. 9

    Bake the Salmon

Place salmon on a baking sheet and bake for 12-15 minutes or until cooked through and flaky.
