    Prepare the Choux Pastry

    Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

    Shape the Profiteroles

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Using a pastry bag or spoon, drop tablespoon-sized mounds of dough onto the prepared baking sheet, leaving space between each.

    Bake the Choux

    Bake for 20-25 minutes until puffed and golden. Do not open the oven door while baking. Remove from oven and let cool completely.

    Make the Chocolate Sauce

    In a small saucepan, heat the heavy cream over medium heat until simmering. Remove from heat and add chopped bittersweet chocolate, stirring until smooth. Add sugar to taste.

    Assemble the Profiteroles

    Once the choux pastry shells are cooled, slice them in half. Fill each with a scoop of vanilla ice cream, then drizzle with warm chocolate sauce before serving.
