Method
Preparation
- 1
Make the Almond Crust
Preheat the oven to 350°F (175°C). In a bowl, mix almond flour, melted butter, sugar, and salt. Add the beaten egg and combine until the dough forms. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and bake for 10-12 minutes until lightly golden. Allow to cool.
- 2
Prepare the Passion Fruit Filling
In a saucepan over medium heat, combine passion fruit puree, sugar, and egg yolks. Stir constantly until the mixture thickens, about 8-10 minutes. Remove from heat and stir in butter until melted and fully incorporated. Pour the filling into the cooled tart crust and refrigerate for at least 1 hour to set.
- 3
Make the Crème Chantilly
In a mixing bowl, whip heavy cream until it starts to thicken. Gradually add powdered sugar and vanilla extract, continuing to whip until soft peaks form. Be careful not to over-whip.
- 4
Serve
Once the tart has set, slice and serve with a dollop of crème chantilly on top.
