Mussels and Accompaniments

Method

Cooking Instructions

  1. 1

    Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.

  2. 2

    Preheat the Wood Oven

Preheat your wood oven to around 500°F (260°C). If using a conventional oven, preheat to the highest setting.

  3. 3

    Sauté Garlic and Chiles

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sliced Fresno chiles. Sauté until fragrant, about 1-2 minutes.

  4. 4

    Add Mussels and Beer

Add the cleaned mussels to the skillet, then pour in the pilsner beer. Stir gently to combine and cover the skillet with a lid.

  5. 5

    Cook the Mussels

Cook the mussels for about 5-7 minutes, or until they open up. Discard any mussels that remain closed.

  6. 6

    Finish and Serve

Remove the skillet from the heat, sprinkle with fresh parsley, and serve immediately with toasted bread on the side for dipping into the broth.
