Method

Prepare the Dough

Activate Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes foamy.

Make Dough

In a large bowl, mix the flour and salt. Make a well in the center, add the yeast mixture and olive oil. Stir until a sticky dough forms.

Knead

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Pizza

Preheat Oven

Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

Prepare Toppings

While the dough is rising, prepare the toppings by slicing the delicata squash and chopping the rosemary.

Assemble Pizza

Once the dough has risen, punch it down and roll it out to your desired thickness. Transfer it to a parchment-lined pizza peel or baking sheet.

Add Toppings

Spread the shredded fontina over the rolled-out dough. Arrange the delicata squash slices and speck evenly on top. Drizzle with olive oil, season with salt and pepper.

Bake

Carefully transfer the pizza to the preheated stone or baking sheet. Bake for about 12-15 minutes or until the crust is golden and the cheese is bubbly.

Finish and Serve

Remove the pizza from the oven, drizzle with truffle honey, sprinkle with toasted pine nuts and chopped rosemary. Slice and serve warm.
