    Activate the Yeast

    In a medium bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Once the yeast mixture is foamy, add it to the flour along with olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

    Prepare for Baking

    Preheat the oven to 425°F (220°C). Grease a baking sheet with olive oil. Punch down the risen dough and spread it onto the prepared baking sheet.

    Dimple and Add Herbs

    Using your fingers, create dimples all over the surface of the dough. Drizzle with more olive oil and sprinkle fresh rosemary on top.

    Second Rise

    Cover the dough again and let it rise for another 20-30 minutes.

    Bake in the preheated oven for 20-25 minutes or until golden brown. Let it cool slightly before serving.

    Drizzle with additional Seka Hills olive oil and serve warm with stracciatella cheese.
