Prep the Potatoes
Preheat the oven to 425°F (220°C). Wash the fingerling potatoes and cut them in half lengthwise.

Season the Potatoes
In a large bowl, toss the halved fingerling potatoes with olive oil, salt, and black pepper until evenly coated.

Roast the Potatoes
Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.

Make the Calabrian Chile Butter
While the potatoes are roasting, melt the unsalted butter in a small saucepan over medium heat. Stir in the Calabrian chili paste and cook for another 2-3 minutes until fragrant.

Prepare the Scallions
Finely slice the scallions, separating the green tops from the white parts.

Combine and Serve
Once the potatoes are done roasting, drizzle the Calabrian chile butter over them. Sprinkle with Parmesan cheese and garnish with the sliced scallions. Serve warm.
