Prepare the Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until it is crispy, about 5-7 minutes. Remove from the skillet and set aside.

Roast in the Oven
Transfer the Brussels sprouts to a baking sheet and spread them out evenly. Roast in the oven for 15-20 minutes until crispy and golden brown.

Make the Brown Butter Vinaigrette
In a separate small saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat and stir in the apple cider vinegar and mustard seeds.

Combine and Serve
Once the Brussels sprouts are done roasting, toss them with the crispy pancetta and drizzle the brown butter vinaigrette over the top. Serve warm.
