Prepare the Vegetables

Wash the yellow squash and zucchini thoroughly. Trim the ends and slice them into thin rounds, about 1/4 inch thick.

Measure Other Ingredients

Measure out the dried cranberries, crumbled feta cheese, olive oil, minced garlic, salt, black pepper, and chopped parsley.

Heat the Olive Oil

In a large skillet, heat the olive oil over medium heat until shimmering.

Sauté the Garlic

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.

Add the Squash and Zucchini

Add the sliced yellow squash and zucchini to the skillet. Stir to combine and cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Season the Mixture

Sprinkle the salt and black pepper over the sautéed vegetables, and stir well to combine.

Add Cranberries and Feta

Fold in the dried cranberries and crumbled feta cheese, cooking for an additional 2-3 minutes until the cheese has warmed through.

Finishing Touches

Garnish and Serve

Remove the skillet from heat. Sprinkle chopped fresh parsley on top for garnish. Serve warm as a delicious side dish.
