Method
Cake Preparation
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it's hot enough to bake the cakes properly.
Melt Chocolate and Butter
In a medium microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Mix in Sugar
Add the granulated sugar to the melted chocolate mixture and whisk until well combined.
Add Eggs and Vanilla
Incorporate the large eggs and egg yolks, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
Fold in Flour and Salt
Gently fold in the all-purpose flour and a pinch of salt, being careful not to overmix the batter.
Fill Ramekins
Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.
Cool and Serve
Let the cakes cool for 1 minute after removing from the oven. Run a knife around the edges and invert onto plates. Serve immediately with a scoop of vanilla ice cream.
