Crust Preparation

Make the Dough

In a large bowl, mix together the flour and salt. Add the diced butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Add Ice Water

Gradually add ice water, one tablespoon at a time, mixing with a fork until the dough comes together. You may not need all the water.

Chill the Dough

Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch pie pan. Transfer the rolled-out dough to the pie pan and trim the edges.

Pre-bake the Crust

Preheat the oven to 425°F (220°C). Line the pie crust with parchment paper and fill with pie weights or dry beans. Bake for 15 minutes, then remove weights and parchment and bake for an additional 5-7 minutes until lightly golden. Allow to cool.

Mix Filling Ingredients

In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, and salt. Mix until well combined.

Add Milk and Eggs

Stir in the evaporated milk, eggs, and vanilla extract into the pumpkin mixture until smooth and well blended.

Fill the Crust

Pour the pumpkin filling into the pre-baked pie crust, spreading it evenly.

Bake the Pie

Reduce the oven temperature to 350°F (175°C) and bake the pie for 45-50 minutes, or until a knife inserted in the center comes out clean.

Cool and Serve

Allow the pie to cool on a wire rack for at least 2 hours before serving. Serve with whipped cream if desired.
