Prepare the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Gradually whisk in the beer (or sparkling water) until the batter is smooth and free of lumps. Let it rest for about 15 minutes.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Make sure there is enough oil to submerge the fish fillets completely.
Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into thick fries. Rinse under cold water to remove excess starch, then pat dry with paper towels.
Fry the Fries
In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the potato fries in batches for about 5-6 minutes, or until they are golden and crispy. Remove and drain on paper towels, then sprinkle with salt.

In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and optional fresh dill. Stir until well mixed and refrigerate until ready to serve.
