Naked Trout with Truffle Potatoes

Prepare the Potatoes
Peel and dice the potatoes into small cubes. Boil in salted water for about 10-15 minutes until tender. Drain and set aside.

Sauté the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the boiled potatoes and sauté until they are golden and crispy, about 5-7 minutes. Drizzle with truffle oil and toss to coat. Season with salt and pepper. Keep warm.

Grill the Trout
Place the trout fillets skin-side down in the hot pan. Cook for about 4-5 minutes until the skin is crispy. Carefully flip and cook for another 3-4 minutes until the fish is cooked through.

Serve
Plate the crispy trout alongside the truffle potatoes. Garnish with fresh parsley and serve immediately.
