Gumbo Preparation

In a large heavy pot, heat the olive oil over medium heat. Gradually whisk in the flour, stirring continuously until the mixture turns a deep brown color, about 15-20 minutes.

Add the chopped onion, bell pepper, celery, and minced garlic to the roux. Sauté for 5 minutes until the vegetables are softened.

Stir in the diced tomatoes, chicken broth, bay leaves, and cajun seasoning. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.

Fold in the crab meat and season with salt and black pepper to taste. Simmer for an additional 10 minutes to heat through.

Remove bay leaves before serving. Serve the gumbo hot with rice, if desired.
