Red beans & rice
In a large pot, heat a small amount of oil over medium heat. Add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.
Add the red beans, vegetable broth, bay leaf, and cajun seasoning to the pot. Stir to combine.
Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes, stirring occasionally.
While the beans are simmering, cook the white rice according to package instructions.
Once the beans are tender, season with salt and black pepper to taste. Serve the red beans over the cooked rice.
