Method

Prepare the Fish

Clean and Season the Fish

Clean the whole fish, removing any scales and guts. Pat it dry and rub the outside and inside with salt and juice from half the lime. Drizzle olive oil over the fish.

Roast the Fish

Preheat the oven to 375°F (190°C). Place the fish on a baking sheet and roast for 25-30 minutes, or until the flesh is opaque and flakes easily with a fork.

Make the Green Curry Sauce

Cook the Curry

In a saucepan over medium heat, add the green curry paste and sauté for 1-2 minutes until fragrant. Pour in the coconut milk and stir to combine. Add fish sauce and sugar, and simmer for 5-10 minutes.

Prepare Fried Garlic

Fry the Garlic

Thinly slice the garlic cloves. Heat the oil in a small pan over medium heat. Add the garlic and fry until golden brown and crispy. Remove and drain on paper towels.

Make Coconut Rice

Cook the Rice

In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and fluffy.

Serve

Plate Your Dish

Serve the roasted fish over a bed of coconut rice, drizzle with green curry sauce, and top with fried garlic and fresh cilantro.
