Prepare the Brussels Sprouts

Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Prepare the Vegetables

Slice the shallots, onion, and Fresno peppers thinly.

Cooking

Sauté the Onions and Shallots

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and shallots, season with salt and pepper, and sauté until they are caramelized, about 10-15 minutes.

Add Brussels Sprouts

Increase the heat to medium-high and add the halved Brussels sprouts to the skillet. Drizzle with the remaining olive oil and cook for 8-10 minutes, stirring occasionally, until they are golden brown and crispy.

Add Fresno Peppers

In the last 2 minutes of cooking, add the sliced Fresno peppers to the skillet and stir to combine. Cook until the peppers are slightly softened.

Serve

Remove from heat and adjust seasoning if necessary. Serve hot as a side dish.
