Cooking Noodles

Bring 4 cups of water to a boil in a large pot. Add the Szechuan noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Making Sauce

In a small bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, chili oil, and minced garlic until smooth. Adjust seasoning to taste.

Combining and Serving

In a large bowl, combine the cooled noodles with the sauce and toss well to coat. Top with sesame seeds, chopped scallions, and cilantro. Serve cold.
