Prepare the Fries

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the French fries until golden brown and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

Make the Mapo Gravy

In a saucepan over medium heat, combine beef broth, soy sauce, doubanjiang, minced garlic, and minced ginger. Bring to a simmer.

Thicken the Gravy

In a small bowl, mix cornstarch and water to create a slurry. Gradually whisk the slurry into the simmering gravy until thickened, about 2-3 minutes.

Assemble the Poutine

On a serving plate, layer the hot French fries, followed by cheese curds. Pour the hot Mapo gravy over the top. Garnish with chopped scallions.
