Preparation

Make the Filling

In a mixing bowl, combine the lobster meat, cream cheese, scallions, garlic powder, salt, and black pepper. Mix until well combined.

Prepare the Wrappers

Lay out the wonton wrappers on a clean surface. Place about 1 tablespoon of the lobster filling in the center of each wrapper.

Seal the Rangoons

Moisten the edges of the wonton wrappers with water. Fold the wrappers over the filling to create a triangle, pressing the edges to seal tightly. You can also fold the corners inward to create a more decorative shape.

Cooking

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Rangoons

Carefully add the sealed rangoons to the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serve the lobster rangoons hot with sweet chili sauce for dipping.
