Make the House Fry Spice

In a small bowl, mix together paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Set aside.

Make the House Sauce

In a separate bowl, combine mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, and salt. Mix until smooth and well combined. Refrigerate until ready to use.

Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin fries.

Fry the Potatoes

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Season the Fries

While the fries are still hot, sprinkle them generously with the house fry spice and toss to coat. Add lime zest and mix well.

Serve

Serve the house fries hot with house sauce on the side for dipping.
