Prepare the Ingredients

Clean the mushrooms and slice them into thick pieces. Chop the scallions, keeping the white and green parts separate. Grate or finely chop the ginger.

Toast the Szechuan Peppercorns

In a dry skillet over medium heat, toast the Szechuan peppercorns for 1-2 minutes until fragrant. Remove from heat and crush lightly.

Cook the Mushrooms

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced mushrooms and cook until they are browned and tender, about 5-7 minutes.

Add Aromatics

Add the white parts of the scallions and the grated ginger to the skillet with the mushrooms. Stir-fry for an additional 2 minutes until fragrant.

Season the Dish

Drizzle the soy sauce and sesame oil over the mushrooms. Add the toasted Szechuan peppercorns and black pepper to taste. Stir to combine and cook for another 1-2 minutes.

Finish and Serve

Remove from heat and garnish with the green parts of the scallions. Serve warm as a side dish or over rice.
