    Prepare the Pork

    Cut the pork belly into 1-inch cubes. In a large bowl, mix together salt, black pepper, and garlic powder. Rub the spice mix all over the pork cubes.

    Boil the Pork

    In a large pot, combine the pork, bay leaves, and water. Bring to a boil, then reduce the heat to medium-low and simmer for about 1 hour or until the pork is tender.

    Drain and Dry

    Remove the pork from the pot and drain well. Place the pork cubes on a paper towel to absorb excess moisture. Allow them to cool slightly.

    Fry the Pork

    In a large frying pan, heat the vegetable oil over medium-high heat. Once hot, add the pork cubes in batches and fry until they are golden brown and crispy, about 5-7 minutes.

    Drain Again

    Using a slotted spoon, remove the fried pork from the pan and drain on paper towels.
