Marinate the Pork
Using a sharp knife, make deep slits in the pork shoulder. Rub the marinade all over the meat, making sure to get it into the slits. Place the pork in a large resealable bag or dish, cover, and refrigerate for at least 12 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 300°F (150°C).

Roast the Pork
Place the marinated pork shoulder in a roasting pan. Add bay leaves around the meat. Cover the pan with aluminum foil and roast for about 4-5 hours, or until the internal temperature reaches 190°F (88°C).

Crisp the Skin
Remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30-45 minutes, until the skin is crispy and golden.

Rest and Serve
Remove the pork from the oven and let it rest for at least 20 minutes before slicing. Serve with your favorite sides.
