Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and set aside to cool.

In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the sugar and continue to beat until combined. Mix in sour cream and vanilla extract. Add eggs one at a time, mixing well after each addition until the mixture is smooth.

Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
