Prepare the Potatoes
Wash and scrub the russet potatoes. Cut them into long strips to create fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked fries. Carefully add them to the hot oil in batches, frying for about 5-7 minutes or until golden brown and crispy.

Season the Fries
Remove the fries from the oil and drain on paper towels. While they are still hot, sprinkle with salt and black pepper to taste.

Drizzle the hot fries with truffle oil and toss to coat evenly.
