Activate the Yeast
In a small bowl, combine warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Mix until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Prepare for Baking
Preheat the oven to 425°F (220°C). Grease a baking sheet with olive oil.

Shape the Focaccia
Punch down the risen dough and transfer it to the prepared baking sheet. Stretch it out to fit the pan and make dimples with your fingers.

Second Rise
Cover the dough with a cloth and let it rise again for about 20 minutes.

Add Toppings and Bake
Drizzle olive oil over the top and add your choice of toppings (herbs, olives, cheese, etc.). Bake for 20-25 minutes until golden brown.

Cool and Serve
Remove from the oven and let it cool slightly before slicing and serving. Enjoy your focaccia with dips or on its own!
